This Japanese Mango Teriyaki salad has an amazing exotic taste and a vibrant texture.
Crunchy pistachios perfectly complement the tangy mango. You can use any type of mango you like. Mint is a real booster that brings freshness and adds a modern touch to this Japanese salad. A pinch of chili bumps up the flavour, but it is not strictly necessary if spicy food is not your thing. The mild version of this mango salad tastes equally good.
The Teriyaki sauce for this salad is a killer. By itself, Teriyaki tastes a little bit blunt, but in this recipe it gets a fully new dimension. A combination of lime and sake gives it a sour and a sharp kick, while cane sugar and honey bring a warm sweetness.
This mango salad is a perfect side to any Asian dish. We like it particularly with grilled or baked teriyaki salmon.

- Slice all 3 mangoes into 5mm thick long strips. In a medium bowl combine the mango strips with cane sugar, fish sauce, lime juice, sake and chili.
- Chop fresh mint into small, 2-3mm strips, and crush the pistachios. Add them to the mango salad. Set aside for 30 minutes.
- Drain the mango salad on a sieve, above a small saucepan. Combine the Teriyaki sauce with the sauce from the mango salad. Add honey, and cook for 15-20min until the sauce becomes dense and thick.
- Pour the Teriyaki sauce over the mango salad.
