This traditional German green herbal sauce comes originally from Frankfurt. During summertime you can buy in most supermarkets in Germany a ready-made selection of herbs used in this recipe. But even outside Germany you can easily find all these greens. If you are missing 1 or 2, you can also replace them with other ones that you like. It is the variety of herbs that makes this herbal sauce so aromatic and refreshing. In this recipe, I am using the ready-made selection of herbs, which is the original mix for this sauce and it includes dill, sorrel, cress, melissa, parsley and chives.
It couldn’t be easier to prepare this sauce. You just mix all the ingredients with a hand blender and your sauce is ready!
The German Green Herbal Sauce tastes great with red meat – lamb or beef, but it also works well in a vegetarian setting, for example, a dish containing potatoes and eggs, or simply served on a slice of bread.

- Combine all the ingredients - herbs, yogurt, sugar, salt and fresh juice from 1/2 a lime in a large plastic bowl.
- Mix everything with a hand blender until you get a smooth, uniform sauce.
- Taste the green herbal sauce and, if desired, add a bit more sugar, salt or lime juice.
