This tomato sauce came up as a combination of love for tomatoes and Porto wine. Porto Tawny wine, to be precise. It’s dead easy to prepare and it tastes irresistibly awesome. It’s now my favorite tomato sauce for any cheesy pasta.

- In a large sauce pan, over a medium-low flame, warm the olive oil together with the peeled and crushed garlic. Fry the garlic until it is pale gold – it mustn’t turn brown or it will taste bitter.
- Add oregano any fry for 1 more minute or until fragrent. Then add the Porto wine and cook for 3min. (If you really can't get the Porto wine, you can try replacing it with Cherry or sweet red wine).
- Add tomato puree and a can of chopped tomatoes. Cook for 10min.
- Add sugar, salt and freshly ground black pepper.
